Solubility

Insoluble in cold water, but can be swelled into a gel block, insoluble in organic solvents, easily soluble in hot water to form a translucent colloidal solution (dissolution speed increases in hot water above 70°C).

Gel

Can form a mature reversible gel in the presence of potassium ions.

Thickening

When the concentration is low, a low-viscosity sol is formed, which is close to Newtonian fluid, and the concentration increases to form a high viscosity.

Synergy

It has a synergistic effect with locust bean gum, konjac gum, xanthan gum and other colloids, which can improve the elasticity and water retention of the gel.
